A classic and delicious Southern cake, that actually has its roots in Jamaica (where it is known as Doctor Bird Cake). Spiced banana cake with crushed pineapple added for a lovely moist crumb - lemon cream cheese icing and lots of toasted pecans to finish.
Small is a single layer square cake that serves 6-8. Large is a traditional double layer that serves 8-10.
Ingredients: Wheat flour, cinnamon, baking soda, sea salt, eggs, banana, sugar, vegetable oil, vanilla, pineapple, pecans, cream cheese, butter.
