I developed this recipe for a dear friend with Celiac disease. She was missing tea time treats the most, so I adapted my Grandmother's lemon loaf for her. It has all the lemony, buttery goodness of a traditional lemon loaf, without the gluten. Wrapped, it will keep well for about 4 days. After that you can toast it and slather it with butter...

Ingredients: GF flour blend (Sweet white rice flour, whole grain brown rice flour, potato starch, whole grain sweet white sorghum flour, tapioca flour, xanthan gum), sugar, butter, lemon zest & juice, eggs, yogurt, baking soda, baking powder, salt.
